Virgin Pina Colada Slushie

Prep time: 10-15 minutes

Ingredients:

  • 500ml pineapple juice
  • 300ml coconut cream
  • Fresh slices of pineapple

Serve: Fresh slices of pineapple

Method:

  1. Using a KitchenAid blender, combine the pineapple juice and coconut cream into the blender. Blitz until it is frothy and well combined.
  2. Pour the mixture into the 4 ice moulds and place into the freezer overnight or until frozen solid
  3. When you're ready to serve, attach the ice shaver attachment to a KitchenAid. Remove the frozen blocks from the moulds and pop them into the attachment, lock it in place. Place a bowl underneath and turn the mixer onto 5-6.
  4. Spoon the shaved ice into 4 glasses, garnish with fresh wedges of pineapple and serve straight away.
