Lemon Loaf with Lemon Drizzle Icing

This delicious lemon loaf recipe is quick and easy to prepare. The fresh lemon and yoghurt flavours are great for a summer afternoon tea or dessert.
Ingredients
- 1 egg
- zest of 1 lemon
- 3/4 cup caster sugar
- 1/2 cup vanilla or natural yoghurt
- 1/4 cup lemon juice
- 1 cup of high-grade flour
- 1 1/2 teapsoons of baking powder
- 3/4 cup icing sugar
- 5 tablespoons of lemon juice
Method
- Preheat the oven to 160 degrees. Grease a loaf tin with butter or spray oil.
- In a large bowl, whisk the egg, lemon zest, caster sugar, yoghurt and lemon juice. Mix the wet ingredients until combined.
- Add the flour and baking powder to the wet ingredients. Whisk until just combined.
- Pour into the greased loaf tin and place in the preheated oven. Bake for 30-40 minutes or until a skewer inserted comes out clean.
- Cool in the tin for 15 minutes then tip out onto a wire cooling rack.
- When the loaf is cool, make the lemon drizzle icing by combining the lemon juice and icing sugar in a small bowl and drizzle over the loaf.
